Tomato and Goat Cheese Pie Recipe

I don’t know if anyone else has a meal the eat only when there significant other is out of the house, but I do. 
Isaac hates goat cheese because growing up his family had goats and he claims that he can taste whatever the goat was eating. 
And he doesn’t approve of meals that don’t contain meat. 
So when he plans on a night out, and I plan ahead and purchase the proper ingredients, this is my go-to meal. This summer I made this recipe as often as one of my heirloom tomatoes turned red. The girls sometimes will eat it too, but I usually end up eating it all myself 🙂 I’ve made it several times for my friend Rebecca, and we love it every time!

Tomato and Goat Cheese Pie
Adapted from Wry Toast

Ingredients:

  • 1 Frozen Pie Crust
  • 1/4 cup Red Onion
  • Dash of Sugar
  • 8 oz Goat Cheese
  • 2 tbsps Honey
  • 1 large tomato
  • Salt and Pepper
Instructions:
  1. Preheat the oven to 400 degrees.
  2. Caramelize the onions in a pan with a bit of olive oil and a dash of sugar on medium heat for about 15 minutes. 
  3. Break apart the goat cheese into the pie crust, drizzle with Honey and spread the caramelized onions on top.
  4. Slice the tomato and layer on top. Sprinkle with salt and pepper.
  5. Cook in the oven uncovered for 45 minutes.
  6. Take out and let cool for 5 minutes. Share it with a friend, or just eat the whole thing yourself 🙂
